Title: Blintzes

Grandma Goldye’s Cheese Blintzes-
(I donated this recipe to my congregation cook book about 15 years ago, but feel free to edit the instruction portion to the “straight” version without all the narrative.)
2 eggs beaten
Dash of salt
½ cup flour added a little at a time before the milk
½ cup water
½ cup milk
1 Tablespoon melted butter
Beat first 5 ingredients in order given, then pour batter into a pitcher and refrigerate for about 15 minutes. Melt a small amount of butter (just enough to grease pan) in an 8 or 9 inch non-stick frying pan until very hot, then pour a small amount of batter into the pan, tilting the pan so batter covers the bottom, then pour the excess back into the pitcher. This step must be done quickly. Fry on both sides, leaving one side less browned than the other. Stack on a plate and cover with plastic wrap until all the batter is used and the filling is made.
Filling:
12 ounces Pot Cheese (Farmers if you can’t find Pot)
1 whole egg
¼ cup sugar
Golden raisins
Slightly beaten egg white
Blend together the first three ingredients then stir in raisins. Place 2 – 3 tablespoons filling on the side of the blintz that is more browned. Fold farthest edge towards the middle and brush with egg white, then fold in the opposite edge so it sticks to the egg white. Fold in the other two sides to enclose the filling. Place blintz, seam side down on a cookie sheet or platter until all the blintzes are made. Cover and chill one hour. Fry blintzes in foaming butter, seam side down first, then lightly on the other side. Add more butter as needed to complete frying all the prepared blintzes.
To properly serve this dish, you must never actually sit at the table with your family; rather it is custom to instead hover over the table, and if possible, each individual guest, constantly passing them cinnamon-sugar, sour cream or strawberry jam. Continue circling the table filling each person’s plate with blintz after blintz. Be sure to ignore cries of, “No! Please! No! No more!” until you’ve run out of blintzes, then chastise yourself for not making enough. Never sit down, no matter how they plead with you. When everyone is too stuffed to move, start making Sanka and telling the story about how everyone in your mah jong group is having marvelous success reducing on the Pritikin diet. You can bring out the sponge cake now.

Jackie, I didn't even know what a blintz once until you posted your recipe.....yummy, I made a batch & they are scrummy..a huge hit with the three men in my home. Thanks!

Oh good! I'm happy you and your guys liked them.
One of my most fond childhood memories is the scent of those blintzes as the elevator in my Grandparent's building ascended . They lived on 16 and by floor 11 the aroma was simply mouthwatering. Sigh. Mine were never quite as good as hers though . . .

funny how i'm exploring & learning more about this site every day! i didn't know we had a recipes forum! lol. well, my cooking is the kind that just provides sustenance for the kids, haha, but my husband has real gourmet skills. He makes sushi, stuff with prosciutto, chipotle mashed sweet potatoes, and amaretto chocolate cheesecake that beats what i've had in most restaurants! & that's not even his dayjob. maybe one day he'll rub off on me a bit. :) anyway, i'm an EXPERT eater, so i'll be attempting the blintzes one of these days, for sure. especially since the only ones i've had were like at IHOP or Denny's or something.... and I have a feeling that's not the best way to be introduced to a new kind of food, lol!

Ok..a little late but the brisket was a hit! It just kept going & going. It was lovely hot & cold...crazy ingredients aside..that was one awesome piece of meat. Thanks Jackie B.

I'm glad you liked them. I think these are so delicious. I'm glad I'm not motivated enough right now to go shopping for the ingredients or I'd eat a whole batch myself.

you mean people actually make them? I am so used to frozen. I have no idea what my mom will make for Rosh Hashanah but I'm sure anything you cook will be better.
I showed her your brisket recipe and she laughed. She said I can't make that.
