For example, I want to reply to a line or two of a previous person's post. If I hit "quote", the whole thing shows up. How do I quote only the portion that I want to comment on? Hope this makes sense.

I'll give it a try:
When you hit quote, you get a top box that you write in and a bottom box with the quote. It's very easy if it's only a single quote. You just go down to the bottom box and edit it like you would any text. The easiest way for me to delete sentences above and below what I want to quote is to highlight the sentences I want to delete and hit backspace.
It becomes a bit trickier when you have multiple quotes but if anyone is interested, I'll give that a try too.
